They are handmade in Peru from a mixture of boiled potatoes and gypsum powder. You can even see the fingerprint left from being handmade! The Spanish Conquers tried to convert the illiterate Incas to Christianity using portable boxes with colorful figures (retablos) depicting Bible scenes. The Peruvianretablois, in a sense, a blend of the two forms. Figures of individual saints may be carved or sculpted of a mix of plaster and cooked potato. The termretablotraditionally applies to a broad variety of religious images which are painted and sculpted over much of Latin America. The word is derived from the Latinretro tabula, which means behind the (altar) table, where devotional images were typically placed.
