Description: This is a vintage HO CHING KEE LEE solid handle cleaver from Hong Kong, with a stainless steel handle and a carbon steel blade edge. The silver blade is straight and sharp. It has been previously used and bears the signature of Chef Eric Cheng. This cleaver is ideal for universal food compatibility and is perfect for any kitchen, making it a great addition to your collection. Chef Eric Chen received this cleaver after winning a cooking contest at the Palace Restaurant Hong Kong on 9/17/1977. The cleaver is etched with his signature on both sides of the blade. A picture is included of him cooking in Hong Kong during the contest. He signed the back of the photo in 1977. Chef Cheng worked for many years at Harrahs State Line in South Lake Tahoe, Nevada, as well as several other casino restaurants in that area. Chef Cheng presented this knife to James A. Dalton on 6/9/2006. The item was then obtained from Mr. Daltons estate. It has been carefully cleaned and is extremely sharp.
