Description: Organically-grown and Home-dried Hachiya and Fuyu Persimmons. No added preservatives, coloring, or sugar. One bag is 6 OZ or 170 grams. SOURCE: Persimmons come from two family trees in Southern California that were planted more than 20 years ago. They have been nourished with homemade compost and hand-pruned to yield 250-300 fruit per tree every year. The fruit are first tree-ripened and later sun-ripened until they reach the optimal period to be dried. PROCESS: Persimmons are washed and sliced by hand. They must be sliced to a certain thinness to be dried without the addition of sugar and preservatives. The slices are then dried in a gentle dry heat below 150 degree F for 7-8 hours. TASTE: Texture is almost like hard pulled taffy with some crisp edges. Taste is like honey with a complex and toned-down sweetness that doesn't hit you all of a sudden. Hachiya (darker) has a sweeter taste and more chewy in texture. Fuyu (lighter) has a milder sweetness and has a texture similar to dried apples.
