Spray or grease pan. Melt together chocolate and ¼ cup of butter. Cream together remaining butter and brown sugar. Beat in eggs one at a time. In another bowl combine flour, baking soda and salt. Slowly add dry ingredients to butter, sugar and egg mixture. Mix in chocolate, beets and vanilla. Blend thoroughly. Pour into prepared pan. Tap gently on countertop to remove air bubbles. Bake for 45-55 minutes. Remove from oven when toothpick inserted into densest part of cake comes out clean. Let cool on rack for 10 minutes before turning out cake.
