Red Russian is great for salads and light cooking. My favorite way to eat kale is to make kale chips. They are a great alternative to potato chips or other unhealthy snacks. Coat the leaves with a little olive oil or other type of oil, sprinkle with a little sea salt and whatever seasoning sounds good and let them dry in the oven or food dehydrator until the leaves a crisp and crunchy. Kale is also a great alternative to lettuce in salads. Plant in late winter for Spring harvest or in late Summer for Fall/Winter harvest. While this plant is great for growing in the garden also consider planting some in your flower beds as a stunning attraction as well. Plant kale in a sunny location for the best growing results and flavor. To extend the storage life of your picked kale, dunk the leaves in cold water prior to placing in the refrigerator. Kale is rich in vitamin C, beta carotene and many other minerals and nutrients. Harvest the outer leaves as the plant matures. Start seeds indoors 6-8 weeks before the last spring frost and transplant once the seedlings are 3” tall. Start new seeds every few weeks for succession growing. Do not over water your kale as this can lead to rotting. Avoid planting in areas where plants of the cabbage family (Brassica) have grown in the previous year.
