Jerusalem Artichoke/Sunchoke Tubers, options, from my Organic Indiana Homestead

Description: Here I have dormant Jerusalem Artichoke/Sunchoke Tubers.These grew in my garden this past summer. They will be fresh dug at time of purchase.Notice: At this time I am only selling these as fresh dug. If our ground is frozen solid I will not be able to dig at that time! However we generally have times of thawing weather throughout the winter. I have set my ship time at 40 days to give me enough time to find a "thawed day" to dig. If our ground is thawed when you place your order you can expect I will ship within several days time! Contact me if you have any questions or concerns! Thank you!Photos shown with 4 ounces and 1 pound are examples of those weights.Individual tuber sizes greatly vary (as you can see in the photos) which is why I choose to sell by weight My garden is not certified organic, however I never use synthetic fertilizers or sprays. I mulch with bedding from our goat and chicken pens, grass clippings (no chemicals used on our lawn), tree leaves, etc. Many friendly toads live in my gardens and eat lots of bugs for me! The happy Bumble Bees visit my flowers and the busy little wrens flit through the plants also looking for those bothersome bugs! My garden is a happy place to be! I have no idea what variety name of Jerusalem Artichoke these are. Quite a few years ago I purchased my start from an organic farmer at the Farmer's Market where I sold my natural skin care products. I did not have a proper place to grow them and because of health issues at that time I did not have energy to do anything with them. But I wanted them and it was my chance to get a start! So I planted them in the grass and weeds in the animals feeding grounds. Once in a while I saw the plants and knew they were still alive. But they could not thrive with the thick roots around them and the goats eating off the plants as soon as they found them! After a number of years I had more energy and more growing space so I dug up several little roots and gave them a garden home. They lost no time! They quickly grew and multiplied. Now I have more than I need for myself. I have never had any other variety of Jerusalem Artichoke so I have nothing to compare. I enjoy their flakey texture, it reminds a bit of fish meat. (Not the flavor but the flakey way they can crumble apart once cooked.) Plants measured approximately 11 1/2 feet tall when in full bloom! I love their cheery yellow flowers at the end of our summer!
