Don't think that you are stuck with only using white vinegar. The paste is flavorful and needs to be diluted to incorporate the spices and to be better absorbed by the meats. But play around a little! It makes for great bbq marinades but also can be used in boils and stews. Just don't go crazy on it!As tasty as it is, remember that it is a condiment.
