Do not use metal lids or strainers.Store the jar at room temperature (ideally around 70°F) away from direct sunlight.Check the jar every few hours. When the milk has thickened and tastes tangy, it’s ready (usually within 12-24 hours).Strain the kefir grains from the finished kefir using a strainer or fine-mesh sieve.Transfer the grains to fresh milk and repeat the process.Tips and VariationsUse plastic lids or stainless steel strainers to avoid contaminating the kefir grains with metal.Whole-fat milk produces thicker, creamier kefir. Low-fat milks can be used, but refresh the grains in whole-fat milk if they stop fermenting properly.Ultra-pasteurized or lactose-free milk will not work. Coconut milk can be used, but revitalize the kefir grains in animal milk every few days.The thickness of your kefir depends on the type of milk used.Store kefir grains in the refrigerator when not in use.
