Description: (Beta vulgaris) Pronounced kee-OH-ja. Italian heirloom beet dating back to at least 1840 produces uniquely colored roots with alternating red and white concentric circles. This pattern is retained when roots are roasted. Roots have a delicious, sweet flavor and vibrant green tops are mild, making them an excellent choice for cooking. 55-65 days. Approx. 100 seeds per packet. CULTURE: Plant seeds outdoors once soil temps have reached 50 degrees. Pre-soaking seeds for 24 hours will improve germination. Sow 1/2" deep, 1-2" apart in rows 12" apart. Keep soil moist until germination has occurred (5-7 days). Thin to one plant every 3-4". Beets can be harvested at any time and the tops are also edible. A second sowing can be made in late summer for fall harvest.
