"Masa harina" is a Spanish term meaning "dough flour." It consists of corn kernels that are cooked and soaked in limewater, a process referred to as "nixtamalization," then dried and ground into a fine flour. The nixtamalizing process unlocks essential nutrients in the corn, making them more bioavailable and easy to digest. When combined with water and salt, masa harina produces a smooth, springy dough that's suitable for making corn tortillas and other Latin American favorites like tamales, pupusas, arepas, and sopes! You can even use this masa harina to thicken soups and chilis or as a breading for fried foods. To make your own batch of 24 corn tortillas, mix together 2 cups of masa harina with 1/2 tsp. of salt in a mixing bowl. Slowly mix in 1 1/2 to 2 cups of water until the dough reaches a firm, springy consistency and is not dry or sticky. Cover the dough with a damp towel and allow it to rest for an hour. When you're ready to prepare, preheat a griddle or skillet to medium-high heat. Divide the masa dough into 2" balls and press using a tortilla press to create 6" tortillas. Alternatively, you can press the dough between 2 pieces of wax paper in lieu of a tortilla press. Place your flattened tortillas on the hot griddle and cook for about 1 minute before flipping and cooking for an additional minute.
