This is a small tree up to 20' high with a broad crown, but sometimes pruned as a hedge. Twigs are smooth and light colored. Leaves: are 1.5 to 3" Opposite, longer than wide and have three shallow lobes and double toothed edges,it exhibits bright green colors and holds up well in full sun, turning a brilliant red in fall. Flowers: Fragrant white flowers appear in loose clusters with young leaves in May and June. Fruit: Numerous reddish, two-winged, inch long fruit mature in late summer. Sun: Full sun to part shad Zone: 2 to 8 Edible parts of Tatarian Maple: The sap contains a certain amount of sugar and can either be used as a drink, or can be concentrated into a syrup by boiling off the water. The syrup is used as a sweetener on many foods. The concentration of sugar is considerably lower than in the sugar maples (A. saccharum). The tree trunk is tapped in the early spring, the sap flowing better on warm sunny days following a frost. The best sap production comes from cold-winter areas with continental climates. Seed - cooked. The wings are removed and the seeds are then boiled. Other uses of Tatarian Maple: The leaves are packed around apples, root crops etc to help preserve them.
