Other names : Leather-head sour orange , Gao Tao, Goutoucheng, Guo-kuo-cheng, P'i-t'ou Ch'êng Crown compact or dense, not weeping. First-year twig surface glabrous; second- or third-year twig surface striate; thorns straight; prickles absent or not persistent. Petiole glabrous, length medium; wings medium, adjoining the blade. Leaflets one, margin entire (by misinterpretation) or bluntly toothed, shade leaflet blades flat or weakly conduplicate, sun leaflet blades weakly or strongly conduplicate. Scent of crushed leaflets spicy or peppery. Fruit large as a regular orange and as broad as long or longer than broad; rind green-yellow , yellow , or yellow-orange ; rind texture slightly rough ; firmness leathery; navel absent; flesh orange or yellow; taste sour. Season of ripeness : December to March Edible parts of : Fruit - raw or cooked. Very bitter. It is used in making marmalade and other preserves. The fruit is about 5 - 7cm in diameter. The rind of the fruit is often used as a flavoring in cakes etc. Used in "bouquet garni". An oil obtained from the seeds contains linolenic acid and is becoming more widely used as a food because of its ability to reduce levels of cholesterol in the blood. The flowers are used for scenting tea. An essential oil from the dried peel of immature fruits is used as a food flavouring.
